50 Vegetarian Recipes from 50 Years of Claire’s Corner Copia by Claire Criscuolo will be a 50th anniversary celebration cookbook divided into seven chapters: Breakfast, Appetizers & Little Plates, Soups & Salads, Entrees, Dressings & Sauces, Deserts, and Mocktails & Smoothies. Each chapter will contain approximately seven recipes each, interspersed with anecdotes from the restaurant and healthy recipes that grew specifically from the experience the pandemic, including several new mocktail and smoothie recipes specifically geared towards helping longtime patrons recover from COVID. The book will be interspersed with color photos of the food throughout, including one or two of the restaurant itself.

Claire Criscuolo is the co-founder with her late husband, Frank Criscuolo, of Claire's Corner Copia, a landmark vegetarian restaurant located across from Yale University. Claire's Corner Copia is known for healthy vegetarian (and Kosher) foods that represent that include Italian, Mexican, Chinese, Middle Eastern, Latin American, and Greek cuisines among many others. Claire is a former columnist for The New Haven Register and the author of four cookbooks. She teaches classes and lectures across the country, and has appeared on television and radio promoting healthy, homemade vegetarian cooking. Claire is also a frequent guest lecturer at Yale University and Quinnipiac University, and an associate fellow at Hopper College.
