This year ‘Tisjir mill-Qalb’ celebrates fresh local produce
In this year’s publication, 13 chefs are presenting 73 traditional Maltese recipes – all made from fresh local produce.
These include, among others, carob syrup, pumpkin and Maltese sausage pie, kusksu, traditional widow’s soup, and octopus and snail stew. Coffee crusted fresh local tuna, lampuki patties, rabbit with dried figs and grain mustard seeds cream, blood sausage (mazzit), snail stew with aromatic herbs, village biscuits (biskuttini tar-raħal), imbuljuta tal-qastan (boiled chestnuts drink) and many others.
