Lipases are triacylglycerol acylhydrolases that catalyse the hydrolysis of triglycerides to release concomitant free fatty acids and glycerol. Lipases are versatile enzymes with multiplexity of catalysis and therefore, constitute an important class of industrial enzymes of recent interests in basic and applied research.
