This book contains a selection of five chapters each discussing a different aspect of polyphenols and their roles in health and disease. Chapter One reviews the oral health benefits of polyphenols found in cocoa. Chapter Two is an overview of the effects of polyphenols on the microbiota of the gut and the consequent roles these play in health and disease. Chapter Three is a review of potential sources and health benefits of various polyphenols. Chapter Four examines different polyphenols from food and medicinal plants as well as their uses in Mexico.
